Sweet And Savoury Crostini
These hot sweet and savoury crostini is a recipe that celebrates my weakness for bread and cheese. Especially when we add a bit of heat to melt these two ingredients into a dreamy delicious mouthful of a snack. Crostini or bruschettas in general are some of the best options when it comes to snacking or feeding a larger crowd, because there are numerous variations to play with. And because they’re easy to make. I added onions to balance out the richness and jam for a touch of sweetness which also works beautifully in enhancing the flavour of cheese.
If you’re feeling adventurous, try mixing a variety of cheeses on these crostini or try the topping on different types of bread. Small changes often bring beautiful unexpected results. Remember that cooking is first and foremost about playfulness and having a good time.
Instructions
Preheat oven to 160°C (fan setting). Toast bread slices in the oven until lightly golden.
Spread some jam on top of each pre-toasted slice of bread, top with sliced mushrooms and onions, herbs and cheese.
Return to the oven and bake for 10-15 mins until the cheese melts and bubbles up.

Ingredients
- 4 slices of brioche bread
- 60 g of melty type of cheese like cheddar, taleggio, gruyere
- a couple of tbsp of fig or other jam
- 1/3 of a medium onion or 1 shallot
- a couple of button mushrooms
- fresh or dried herbs (rosemary, oregano)
- freshly ground black or multi-coloured peppers
- sea salt
